This determines the pattern of the heat. Hottest spots on each unit's grill are at the center (where gas jets are usually closest together) and directly over the burners' perimeter. Next-hottest areas are across the back of the grill. The coolest area is across the front of the grill; at any point where the firebox is perforated, such as at a match hole, you have significant heat loss.
